- Page 195. "This beer of is one of my best, and the cherry flavor blends very well with the rich melanoidins of the malts, making it taste like cherry pie crust."
- Notes:
- If using cherry puree, place it in a secondary fermentor and rack the beer onto the fruit. Allow the beer to rest for 2-4 weeks after the secondary fermentation stops before packaging. The cherry juice concentrate can be added directly to the primary fermentor and the beer does not need to be racked.
