- Aromatic malt (a.k.a. melanoidin malt) is similar to a dark Munich 20L, and in some cases probably is literally that. It has a very low diastatic power, but gives wonderful rich malt flavor and aromas, like dark bread crust. Aromatic malt contributes a deep amber or walnut-brown color to beer. Use as 5%-10% of the grain bill for accent.
