Source Notes:
Created by Blockhead Bob and loosely based on North Coast Brewing Co. Blue Star Wheat Beer Clone. Developed to use homegrown Chinook hops, local Palisade peaches, and altered to make it a more amber wheat ale.
Notes:
Mash the grains at 154F for 60 minutes. Mash out, vorlauf, and then sparge at 170F to collect approximately 7 gallons of wort. Boil 90 minutes, adding hops at times indicated. Cool the wort to 75F, aerate the beer, and pitch your yeast. Allow the beer to cool over the next few hours to 68F, and hold at this temperature until the beer has finished fermenting. After a week add 3 lbs Palisade peaches to primary. After another week transfer to secondary. After another week bottle or keg.
