Notes:
First attempt at double 10 gallon batch of beer and trying different yeasts in the split fermenters. Just doubled original all grain recipe. Even though doubling, this is one of my best all grain brews from mash temp control, to sparging, and boiling.

Yeast

NameLabProductManufacturedStarter
Belgian Gnome AleInland IslandINIS-22201/31/2018
Notes: Getting crazy with Belgian yeast in Scottish ale but HBS talked me into trying this yeast. Should be interesting comparison. Starter completed night before brew in glass growler with foam stopper. This yeast got off to more vigorous start.
Scottish AleWyeast172801/22/2018
Notes: Starter completed night before brew, used starter flask for this one. Slower to start but caught up and continued well.

Other Ingredients

Irish Moss1.5 Tbsp.15BoilClarifying
Notes: Added with 15 minutes left in the boil.
Maltodextrin16 oz.5BoilOther
Notes: Added with 5 minutes left in boil.
Oak Chips4 oz.1 weekSecondaryFlavor

Mash Steps

StepNameTarget TempActual TempMash TimeInfuse AmountInfuse Temp
1Single Infusion Mash15315203.5175
Notes: About 5 degrees higher than calculated strike seems to be right.
2Single Infusion Mash1531512000
Notes: Let ride at 151 F at 20 min.
3Single Infusion Mash153155401196
Notes: Added 1 gal boiling water to raise temp from 148 F to 155 F.
4Single Infusion Mash1531536000
Notes: Final at 153 F and let sit some past 60 waiting for sparge water.
5Fly Sparge1701706010180
Notes: New sparge set up using ladder works great. Filled 5 gal HLT 2x with 180 F. Ball valves on HLT and Mash Tun opened all the way. 1 hour to fill kettle with 12.5 gallons of wort. A little tough juggling the timing of sparge water to right temp in 2 ite

Secondary03/16/201803/24/2018000
Notes: Racked each 5 gal bucket to 2 separate glass carboys on top of Jack Daniels soaked oak wood chips. Labeled each with the yeast used. Fermented in closet, crawl space too cool.
Kegged03/24/201804/06/201836162.67
Notes: Slight issues with over foaming from kegerator under house.
Kegged04/06/201804/12/201837142.42
Notes: Moved both kegs from under house to upstairs. Increase temp and decrease psi. Gnome keg better, but Scot keg still foamy. Removed from Co2 for a couple of days but no help.
Kegged04/12/201839142.34
Notes: Gnome keg seems to be better, still increasing temp from 37 to closer to 40 F. Removed Scot from CO2 and plan to leave off for a week and periodically bleeding before reconnecting.

Notes: Finished Gnome yeast keg.
