- Notes:
- First attempt at double 10 gallon batch of beer and trying different yeasts in the split fermenters. Just doubled original all grain recipe. Even though doubling, this is one of my best all grain brews from mash temp control, to sparging, and boiling.

Yeast
Name | Lab | Product | Manufactured | Starter |
---|---|---|---|---|
Belgian Gnome Ale | Inland Island | INIS-222 | 01/31/2018 | |
Notes: Getting crazy with Belgian yeast in Scottish ale but HBS talked me into trying this yeast. Should be interesting comparison. Starter completed night before brew in glass growler with foam stopper. This yeast got off to more vigorous start. | ||||
Scottish Ale | Wyeast | 1728 | 01/22/2018 | |
Notes: Starter completed night before brew, used starter flask for this one. Slower to start but caught up and continued well. |
Other Ingredients
Name | Amount | Time | Use | Type |
---|---|---|---|---|

Notes: Added at the beginning of the boil with hops. | ||||
Irish Moss | 1.5 Tbsp. | 15 | Boil | Clarifying |
Notes: Added with 15 minutes left in the boil. | ||||

Notes: Added with 5 minutes left in boil. | ||||

Mash Steps
Step | Name | Target Temp | Actual Temp | Mash Time | Infuse Amount | Infuse Temp |
---|---|---|---|---|---|---|
1 | Single Infusion Mash | 153 | 152 | 0 | 3.5 | 175 |
Notes: About 5 degrees higher than calculated strike seems to be right. | ||||||
2 | Single Infusion Mash | 153 | 151 | 20 | 0 | 0 |
Notes: Let ride at 151 F at 20 min. | ||||||
3 | Single Infusion Mash | 153 | 155 | 40 | 1 | 196 |
Notes: Added 1 gal boiling water to raise temp from 148 F to 155 F. | ||||||
4 | Single Infusion Mash | 153 | 153 | 60 | 0 | 0 |
Notes: Final at 153 F and let sit some past 60 waiting for sparge water. | ||||||
5 | Fly Sparge | 170 | 170 | 60 | 10 | 180 |
Notes: New sparge set up using ladder works great. Filled 5 gal HLT 2x with 180 F. Ball valves on HLT and Mash Tun opened all the way. 1 hour to fill kettle with 12.5 gallons of wort. A little tough juggling the timing of sparge water to right temp in 2 ite |
