Page 309. This alcoholically low wheat beer offers a refreshing sparkle to your beer cellar. The subtleness of German hops blesses this light ale with an authentic German character.
Notes:
This recipe calls for using a "temperature-controlled" procedure for mashing 8 lbs. of grains and adjuncts (see chart, page 300). Combine the crushed grains, malted wheat, and gypsum with 2 gallons of 130 F water and proceed with a protein rest. Raise temperature by adding 4 qts of 200 F water and continue with starch conversion at 150 F for 10-15 minutes. Complete conversion by raising temp to 158 F and holding for 10-20 minutes or until an iodine test indicates complete conversion. Sparge with 4 gallons of 170-180 F water. Bring wort to a boil, add boiling hops and continue to boil for 1 hour. Add the Irish moss during final 10 minutes of the boil. Add the aroma hops during the final 1-2 minutes of boiling. Remove the spent hops and sparge. Cool the wort as quickly as possible. Pitch the yeast, ferment to completion and bottle or keg.
