- Smoked malts are a family of two-row base malts that have been cured over wood during the kilning process or have been smoked afterwards. Smoked malt can be used as 100% of the grain bill for a traditional rauchbier, or in smaller amounts (e.g. 20%) to add accent. Various woods, such as apple, beech, cherry, or mesquite, can be used for the smoking to give distinct characters.
