- Brown malt is getting hard to find, because it is only used in a couple of styles, such as old ale, porter, and stout. It has a very dry, bitter roasted character that falls somewhere between amber and chocolate malt, and it is not sweet. Kind of like concentrated bread crust. Use as 5%-10% of the grain bill, depending on style. No diastatic power.
